Before Barrocos Latin Cuisine Owners Mirtha and Salvador Cardenas opened Barrocos May 29th, 2020, they owned and operated Dos Chavos Mexican Restaurant for eleven years. They closed Dos Chavos in order to open Barrocos Latin Cuisine downtown. Their menu has authentic Colombian cuisine in addition to their crowd-pleasing Tex-Mex dishes. 

Owner mirtha was the master mind behind the interior design and said she changed her mind around ten times! They did not want it to have the typical mexican restaurant decor and wanted to add something unique and elegant to the downtown area.

Salvador is from mexico city and mirtha is from chicago. Growing up, mirtha went to a ranch in mexico every summer and that's where she learned much of her cooking. There, they used a mortar to extract for spices/herbs, not the powdered stuff you buy from a store. Recipes were passed down without measurements, only ingredients. For her business, mirtha had to measure everything in order for the cooks to know how to recreate her dishes. For example, she couldn't write a "Hand-full" in the instructions so she had to measure how much fit in her hand, what a "Pinch" was. Mirtha learned colombian food her ex-husband's family whom also cooked using traditional methods.
